- SageTheir signature beef offal hotpot was loaded with stuff and packed with flavor. The second I lifted the lid the smell just hit me — amazing. The beef brisket was fall-apart tender, the honeycomb tripe had that perfect bouncy bite, the beef intestines were rich and fatty, and the beef skin had so much collagen it was unreal. Even the radish on the bottom soaked up all that broth and tasted so good. And honestly the fried gluten puffs and corn were a nice surprise too — super juicy and flavorful.
