Got the hanging tender and it was the perfect mix of fat and lean — only 8 seconds in the broth and it was so tender, dipped in that satay sauce and the flavor was spot on. The hand-punched beef tendon balls were super bouncy and chewy, and when I bit into them they were actually juicy inside, which totally surprised me. The sauce station had a ton of options and the satay sauce was so rich it just clung to the spoon, made it really fun to mix my own dipping bowl. Service was great too, the staff actually helped us cook the meat at the table which was a nice touch. Overall just a really comfy experience, definitely coming back.
