- kind_chestnutWe ordered the hand-sliced fresh lamb and honestly the slices were cut so evenly, super thin but still thick enough to hold together. You dip it in the hot pot for just a few seconds and it's done — so tender it practically melts and you can taste all that juice. The dipping sauce was sesame paste mixed with chive flower and fermented tofu and oh my god I couldn't stop eating. The clear broth base is really clean, you can actually taste how fresh the lamb is. We also added frozen tofu and wide glass noodles, and once they soak up the broth they are insanely good. The server kept coming by to tell us exactly how long to cook the meat which was such a nice touch. And the sesame paste itself is super rich, and paired with the fresh-fried chili oil on the side? The flavors are so layered. Definitely coming back next time I'm in Beijing.
