For grilling, marinate the bones first, then roast until golden and crispy.
Grass CarpRemove scales from the grass carp, wash clean, cut into segments, and marinate with cooking wine and ginger slices. Then pan-fry in a wok until golden brown on both sides. Add green onions, ginger, garlic, and doubanjiang (fermented broad bean paste) to stir-fry, add water, and simmer until fully flavored. Finally, sprinkle with chopped green onions.
Garlic-Flavored Sea BassClean the sea bass, make diagonal cuts, marinate with wine and ginger to remove fishy smell. Sauté garlic, mix with soy sauce, sugar, vinegar; pour over fish, steam, garnish with scallions and cilantro.
Smooth Tofu DelightSilken tofu dish made with soft tofu as the main ingredient, typically served with minced meat, mushrooms, and greens. Tofu is blanched to remove odor, then stewed with seasoned minced meat to absorb the flavorful broth. A touch of cornstarch may be added for a glossy finish.
