Double Egg Crepe with PancakeDouble-egg Jianbing is a traditional Chinese breakfast snack made from a thin pancake base made of flour, topped with two fried eggs and seasoned with scallions and sweet bean sauce. The batter is spread into a circle, an egg is cracked and evenly distributed, scallions are sprinkled on top, the pancake is flipped, sweet bean sauce is brushed on, and it is finally wrapped around a crispy youtiao (Chinese cruller) or guozi (a type of fried dough stick), ready to be enjoyed.
