  Honestly the freshly sliced lamb shoulder was a must-order — you could literally see the marbling, super clear marble pattern through the meat, and they cut it nice and thin so just a few seconds in the boiling broth and it's done. So tender and juicy, that fatty flavor mixed with the meat taste was honestly so good. We also got the fresh lamb leg, which was actually really solid — firm texture, nice and chewy, barely any gamey smell at all. Dipped it in that sesame paste with chive flower sauce and bam, instantly that classic old Beijing hotpot vibe just hit you.
