It came out golden and crispy on the outside, like that perfect caramel color with a glossy oily sheen, and the second I bit in it was just CRACKLE. The meat inside was super tender and bouncy, the fat just melted in my mouth, and the smokiness from the grill was on point. They sprinkle this special dry seasoning on top, salty with just a little kick, and the cumin and chili powder mix with the meat flavor in this way that gets better the more you chew. The owner told us they use top grade pork (the part around the heart apparently), and they score it before grilling so the flavor really gets in there. You could literally hear the fat sizzling while it was cooking and the smell was making me starving before it even hit the table. Wow. Definitely coming back for this.
