Dishes
Cold DishCold dishes are prepared by cooking, marinating, or eating raw ingredients, then cooling them to room temperature or refrigerating before serving. Common ingredients include cucumber, tofu skin, jellyfish, chicken breast, wood ear mushrooms, and carrots. Preparation methods include mixing, pickling, blanching, and freezing.
Offal SoupOffal soup is made by boiling pig stomach, intestines, and lungs with water, then adding ginger slices and green onions. Cook until ingredients are tender, resulting in a clear or slightly milky broth with rich flavor.
Stir-fried LiverStir-fried liver is a traditional snack made primarily from pig liver, intestines, and starch thickening. The pig liver is sliced, the intestines are cut into segments, and both are quickly stir-fried with various spices and seasonings. Finally, starch is used to thicken the sauce, resulting in a rich, flavorful dish with a satisfying texture.
Braised Flatbread with MeatBaozi with meat is a Chinese snack, primarily made with baozi and pork that has been stewed to a perfect balance of fat and lean. The baozi is baked until golden and crispy, then filled with seasoned, tender, and juicy stewed pork. The succulent meat complements the crunchy texture of the baozi beautifully.
Pig's trotterPig trotters are blanched and then slowly stewed with seasonings until tender. The main ingredient is pig trotters, commonly accompanied by ingredients such as ginger, scallions, cooking wine, and soy sauce. The primary cooking method is slow simmering.
Steamed White FlatbreadBai Shaobing is a flour-based food made by kneading dough, resting, rolling out skins, optionally adding filling, then baking in an oven or on a flat pan. The exterior is crispy while the inside is soft and flavorful.
Offal SoupOffal soup is a dish made primarily from sheep offal such as sheep stomach, liver, lungs, and intestines, carefully simmered to create a rich broth. The preparation involves placing the offal together with appropriate seasonings and water into a pot, then slowly stewing over low heat until the broth turns milky white and the offal is tender and flavorful.
Fried Tofu SoupDoubao Soup is a soup dish primarily made with tofu. The tofu is fried to form bean curd bubbles, which are then combined with clear broth or stock and simmered with appropriate seasonings. The bean curd bubbles are crispy on the outside and tender inside, while the broth is flavorful and nutritious.
Sauced PorkSauce meat is a traditional dish made primarily from pork belly. First, the pork belly is marinated to absorb flavors, then cooked or steamed until tender. Finally, it is glazed with a specially prepared sauce, allowing the meat to fully absorb the aroma and taste of the sauce.
Braised Pork ElbowBraised pork knuckle is a traditional dish made primarily from pork knuckles. First, the pork knuckles are cleaned thoroughly and then marinated to allow them to absorb flavor fully. Next, the marinated knuckles are simmered slowly in a rich sauce until the meat becomes tender and the sauce thickens. Finally, the dish is served sliced.
Reviews
- Ari_6Found this little old Beijing style spot near Jiaomen Road on the weekend — so glad we stumbled on it. The sesame flatbread sandwich with braised pork is a must-order. The flatbread is baked fresh so it's super crispy outside but still soft inside, and the pork is that fatty-lean mix with a rich soy braise flavor, really chewy and not greasy at all. The sauce was just right honestly. We also got the tofu puff soup with fermented tofu and chive flower — sounds weird but it's actually super warming and has this nice little kick to it. The pork portion is pretty generous too, one sandwich with the flatbread is honestly super filling. The place is tiny but it has that real local "huo yan qi" vibe — felt really comfortable eating there. Would definitely go back.
