The rice noodles are flown in from Changde apparently, and you can really tell — super springy and chewy, just the texture I was hoping for. The beef was stewed till it was melt-in-your-mouth tender, and the broth was rich and packed with flavor. The mala spice had real depth to it, numbing but not overwhelming. The pickled long beans on the side were a nice tangy touch and made the whole thing way more appetizing. Place itself is clean and cozy, wooden tables and chairs that actually look comfy. There's a little self-serve station for extra toppings which is a plus. Service was kinda slow at lunch since it was packed, had to wait a bit, but totally worth it — the food more than makes up for it. Would come back for sure.
