Dishes
Scissors PotatoesScissor Potatoes is a home-style dish primarily made with potatoes. The potatoes are cut into small pieces, blanched, then stir-fried with oil and seasoned with salt, soy sauce, scallions, ginger, and garlic. Finally, it is garnished with chopped green onions or cilantro. A pair of scissors is used during preparation to help the potatoes absorb flavors more easily.
Dodu NoodlesDudu粉 is a specialty snack from Guizhou, primarily made with凉粉 (cold jelly), sliced meat, tofu skin, and bean sprouts, seasoned with a unique spicy and sour dressing. After cooking, it displays an appealing color and aroma.
Dried Flower VegetableDried cauliflower is a dehydrated vegetable made from fresh cauliflower. It's prepared by blanching and drying the florets to remove most moisture for storage. Rehydrate with warm water before stir-frying, stewing, or making soup.
Freshly Sliced Pork Neck MeatFreshly sliced pork neck meat, tender and flavorful, often quickly cooked to preserve its natural taste.
Freshly Sliced Beef BrisketFreshly sliced brisket (beef plate) uses beef from the plate cut, freshly cut and served immediately. This cut is firm and elastic with balanced fat distribution, suitable for various cooking methods such as hot pot or grilling.
Braised Chicken Feet with Tiger SkinHǔpí Jīzhǎo is made primarily from chicken feet. The chicken feet are deep-fried until the skin becomes crispy and bubbled, then marinated with seasonings to absorb flavor. Finally, they are steamed to allow the taste to penetrate into the inner parts, creating a texture resembling tiger skin.
Guiyang Crispy Pork BallsGuiyang crispy pork cracklings and meatballs is a dish featuring minced pork seasoned and shaped into meatballs, while pork skin is fried in lard until crispy to make 'crispy cracklings'. The meatballs are then stewed or stir-fried with the cracklings, absorbing their rich flavor for a complex taste.
Guiyang Soft Sausage SlicesGuiyang soft sausage slices is a dish made primarily from lean pork, sliced and stir-fried with soft sausage—a fermented cured meat specialty of Guizhou. Garlic and chili are typically added, sautéed in hot oil until cooked, resulting in a tender texture and rich flavor.
Super Tofu DumplingsSuper tofu balls made with soft tofu, pork mince, scallion, ginger, egg, and a touch of starch, shaped into balls and fried until golden or steamed and drizzled with sauce. The process emphasizes texture—crispy outside, tender inside.
Spicy and Sour BrothThe spicy and sour broth is based on a high-quality stock made from pork or chicken bones, seasoned with chili peppers, Sichuan peppercorns, ginger slices, garlic cloves, onions, and other spices, brought to a boil. White vinegar, lemon juice, or pickled chilies are added to enhance the sour flavor, followed by vegetables such as bean sprouts, wood ear mushrooms, and enoki mushrooms. The cooking process emphasizes precise control of heat to ensure a rich, layered flavor in the broth.
Fresh-cut TenderloinFresh-cut sirloin from the beef hind leg, sliced fresh and cooked immediately to preserve natural texture and tenderness, typically stir-fried or涮煮 to highlight the ingredient's original flavor.
Reviews
- sapphire_woodpeckerWent to check out 夺夺粉 with a friend after wandering around 芳华里 — it was freezing out and neither of us had ever tried it before so we were pretty hyped. The restaurant is on the second floor, right when you step out of the elevator you can see it. And from upstairs you can actually see the little pig train running around below which was kinda cute lol. Inside it's got that whole small-stool, old-school neighborhood vibe. The decor's actually pretty nice, though honestly when it's cold outside the place does feel a bit chilly. Service was solid though — we got there early and the staff helped us pick out a good table. They also brought out the sauces and stuff. Food came out super fast, seriously I went to the bathroom and by the time I came back almost everything was already there. Ingredients were fresh and the portions are generous too. At first it doesn't look like a lot in all those little bowls but then you start eating and realize it's actually plenty. The two of us were totally stuffed and still had leftovers. Flavor was legit — everything was really well-seasoned after sitting in the hotpot. Lots of sauce options too, we mixed up a couple and they were so good. I'd definitely come back.
