The bluefin tuna belly literally melted the second it hit my mouth, and the marbling was gorgeous. The rice was clearly made fresh by the chef right in front of you, had this light tangy vinegar flavor that wasn't too heavy at all. And the hand-pressed sushi part was such a fun touch, the foie gras one had this crispy caramelized outside that was so unique, all creamy and smooth inside. The place itself was really quiet and comfy, and the staff paid close attention to everything, swapping out plates the second we finished. We went with the 980 per person set menu and honestly it was worth it, way more of the limited seafood options that way. The Canadian sea urchin and the golden eye snapper were both super fresh. Whole experience was just really enjoyable, I'd happily come back.
