- Teal_24The sea urchin sushi literally melted in my mouth — so sweet but not heavy at all, and then the rich fattiness of the foie gras just kind of exploded on my tongue. So many layers going on. In the nigiri set, both the botan shrimp and the sweet shrimp were super fresh and had that perfect bouncy Q texture, and the sushi rice had just the right amount of tangy vinegar flavor. Didn't even need extra soy sauce. The sashimi platter was sliced nice and thick, really fresh — the fatty tuna belly especially was silky and packed with that ocean umami flavor. The chef was super focused while working and actually adjusted the pace of the courses to match how fast we were eating, which was a really nice touch honestly. Everything tasted fresh, the seasoning was spot on, and I left feeling totally satisfied.
