Its main ingredients include beef tallow, Pixian broad bean paste, various dried chilies (such as bullet chili and erjingtiao), Sichuan peppercorns (Hanyuan peppercorns), fermented black beans, ginger, garlic, fermented glutinous rice, and various spices (like star anise, cinnamon, tsao-ko, and bay leaves). During preparation, beef tallow is melted, then broad bean paste, black beans, ginger, and garlic are stir-fried until fragrant and red oil is released.
