The broth was that perfect sour and spicy thing that just wakes your whole mouth up, and you can tell the beef bones were simmered forever because the flavor was super rich. The beef slices are cut fresh and they're so tender, basically melt on your tongue. You HAVE to get the Shiping tofu pockets — I don't even know how to describe them, the outside gets a little chewy while the inside is this silky, juicy, almost creamy thing packed with bean flavor. Obsessed. Oh and the dipping sauce bar has like 20+ options, and the staff actually walked us through which ones go with what. That was such a nice touch honestly. The fennel potato cakes were crispy on the outside, soft and sticky on the inside, and dipping them in the sour broth cuts through all the richness perfectly. Everything tasted really fresh and you can tell it's the real deal, not some watered-down version. Great spot for hanging out with friends, we're definitely coming back.
